Healthy eating?

I have been trying to make an honest effort into eating healthy.  I think that I (with the exception of a few times) have done pretty well sticking to eating more healthy meals.  I am trying to incorporate more fruit and veg into my regular diet.  I am struggling with variety, however, because I feel like I'm only eating the same three meals.  As you can imagine, this makes it very difficult to stay motivated.

I had a thought the other day, that I would maybe make more videos/blogs about making a variety of healthy-ish (more whole foods, and less processed) meals and desserts that I can share with you.  They of course would be based off an inexpensive/quick and easy lifestyle (because I am a college student and can't be bothered to take hours a day to cook).  I have always loved cooking, baking, and preparing food, so I think this would be a great way to incorporate one of my hobbies into this blog.  What do ya think?  Would you like to see this happen?  What kind of recipes would you like?
