Hectic Week!

OOF-DA! Boy, does that sure make me sound Minnesotan!  Anyways, it's not even Monday yet, and I can already tell that this is going to be a hectic AF week.  There are so many projects going on.  Don't you just love it when all your professors decide to assign projects, at the SAME TIME??!?!  Awesome.  (Not really)  But in other news, we get Wednesday off of school because it is "Community Day" which is where we are supposed to give back to the community by volunteering your time.  I think we are going to the local food bank to pack up food.  It is always nice to give back.  And to not have school.

Also, in other, other(IDK why I'm telling you this) news,  I have been getting really good sleep.  And I mean, REAAALLLY good.  I think in the past, my sleep schedule has been so messed up - I just go to sleep so late and I have to wake up early and then I'm tired for the rest of the day.  I have finally found the best routine for my sleep schedule and I have never woken up more refreshed.  Sleep is amazing!  (Haha!)

I hope you enjoyed reading some ramblings from my brain.  But it's getting late, and I have school tomorrow, so I will talk to you after this hectic week is over! Hopefully, if I survive.

P.S. I think that HW probably going to consume my entire life, so if you don't hear from me much this week, don't worry - I didn't forget about you :)

Homemade Banana Bread

I had some extra leftover bananas laying around, and so we decided to make some homemade banana bread.  YUM.

If you are curious as to how to bake it/ingredients/all the things, we adapted this recipe from Epicurious which seemed to work out really well.  One small change: instead of 1 cup of sugar, after reading reviews, we ended up only putting in 3/4 cup of sugar.  I think it would have been WAAYY too sweet if we put any more sugar in.  That is one recommendation I would make, otherwise the recipe was frickin' delish!

Here's the banans' in the bowl, pre-mashing/mixing/cooking.

Be prepared to salivate.  The house smells AH-mazing while this is cooking.

Here's the final product.  What a beaut.   Look at that CRUST. So nicely browned. 

Last step: Consume all the bread.  All of it.

A Love Letter to Myself

Valentine's season is upon us!  I think that we all get caught up in whether or not we have a special someone, that we often forget that sometimes there is someone that needs more love: You.

So today, I am going to write a love letter to myself.  I don't know if this is weird or not, but I don't care.

Dear Emily,
Dang girl, you are one tough cookie!  Even though things have not been easy, you have still carried on with so much determination and passion, and all of this hard work is amazing.  I know that you can do anything that you set your mind too.  This is why I love you.  Even though you often feel like no one gets you, or all your friends think you're annoying, or you feel alone, you need to know that there are lots of people who do care about you and want you to do well.  On the reverse side, people also want to see you fall on your face and fail, don't listen to them.  They are not you; they have no reason to tell you what you should and shouldn't do.  You do you, girl!  This is why I love you.
There are so many reasons why I think you're great but it would take me forever to express my feelings, but...
Will you be my valentine?

I encourage everyone to write a love letter, and to write about things that they love about themselves.

Vegan 6 Week Challenge

As the season of giving something up (Lent)  is upon us, I thought I would take this an opportunity to really try and succeed in something that I have wanted to do for so long: going vegan!

*Note: I know that "vegan" has so many negative connotations, and I don't want that, so I will most likely refer to it as a "plant-based diet".* read that right.  Starting tomorrow, I am going to eat an exclusively plant-based diet!

As I said, I have been wanting to try an exclusive plant-based diet not only because of the amazing health benefits, but also because of the many animal cruelty documentaries that I have been watching have absolutely broken my hearts (I recommend Earthlings, Vegucated, as well as the many YouTube videos out there; there are some amazing ones out there if you do a simple Google search).  I have come to realize that I don't want to be a part of this animal cruelty anymore.  I think one thing that has been difficult for me in the past (to go plant based) is that everyone, literally EVERYONE, around me does not eat this diet, nor do they care too.  Even when I have hinted that I am planning on doing this change, people have said that I'm a "grass eating hippie" and that they are going to continue eating meat.  I am also surrounded by a giant hunting culture, where many people hunt for fun.  I am not writing this to shun anybody who does this, I'm really not.  I just want to explain why it has been difficult for me.  I have never really been around people as a support system.  I have found a lot of people on YouTube and the blogging community, which I watch/read all the time.  I really like FullyRaw Kristina and MinimalistBaker!

Anyways, I'm getting off topic...I am really eager to start this and I hope you are excited to go on this journey with me!  Stay tuned!

My Birthday In Review

I don't know about you, but I'm feelin' 22...

Yes. That is right.  I just had my 22nd birthday.  Yay!  No, I don't feel any different from 21.  No, I didn't "get too crazy"..  But I had a whole heck of a good day, that's for sure.

I recently became a Starbucks rewards member, which means a free birthday drink of any size.  That's right.  ANY. SIZE.  Naturally, I had to get the largest size and get a extra stuff mixed in, because why not.  It's my birthday - I can get a little bit crazy (lol) if I want too.  I opted for a venti  iced caramel macchiato with soy milk and it was so so so delicious.  It was definitely the way to start the morning and the best part was that it was free (normally that would cost like $7, and even though I love coffee, I'm not planning on spending that much for a cup of coffee).
(I mean just look at that beauty...*caffeinated heart eyes*)

Next, I found out that people were touring our townhome because they might lease it after we leave this year.  They were to arrive at 11am, and needless to say, our home wasn't in ANY shape to show people, let alone potential renters.  Basically, we rush-cleaned our entire place - from the bathroom, to the kitchen floor, to our front door mats.  After we lit our Bath and Body Works Marshmallow Fireside (YAS.) candle, the house was spotless, and smelled frickin' delicious!, with 10 minutes to spare.  Clean houses makes me happy.  Makes me feel organized and just better feeling, if you know what I mean.  The tour literally took 2 minutes, which is funny considering how long it took to clean, but at least it gave us a good excuse to kick our butts and deep clean the entire house.

Afterwards, my parents and sister made the trek up to Duluth, and we decided to go out to lunch because I was STARVING, as the only thing I had consumed was my then-watery coffee goodness.  We went to Grizzly's, which is just like your standard American restaurant that served everything from salads, to burgers, to pasta.  I opted for the chicken, avocado, bacon sandwich on a ciabbata roll.  It was so tasty I ate the entire thing!

After that, we hit up the mall that was literally right next door.  I also happen to be a Sephora rewards member, and you can also get a free product.  Gotta love free stuff!  I got the fresh soy face cleanser and fresh rose face mask (review of products on the way!)  It was nice because there wasn't any place that we had to be, so we just sort of meandered through the mall, looking at stuff that peaked our interest, including: Bath&Body Works (obvi), Victoria's Secret (30% off sports bras, HOLLA!), and Barnes & Noble.  It was nice to just get to see my family in person and not just on facetime.  I appreciate it a lot.

We got tired and came back to my place to eat cake and ice cream, and open presents.  My mom always buys this special triple chocolate cake with chocolate chips and a glaze from Sam's Club and it is like my favorite thing ever.  It is rich though so one small slice is just the perfect amount and it makes the cake last longer.  Also not the healthiest, but that's okay because BIRTHDAY.

Finally, my parents had to leave to go back home because they, rightfully so, don't like driving in the dark and it was starting to snow.  After they left, I pretty much stayed in, hung out with my roommates/BFFLs and worked on homework that I procrastinated on until 11 pm, then went to bed.

Sorry for this really long post, but I thought it would be nice to give more of a "diary" feel to this blog post, so hopefully you enjoyed reading it (let me know if you want more diary type blog posts!)  But overall, I had such a nice day, and even though it wasn't filled with "getting wasted" or other stereotypical 22 yo things, I had such a fun time hanging out with my family and friends and just doing whatever.  That's all I can ever ask for.

Also,  THANK YOU for all the birthday wishes on twitter, facebook, instagram, tumblr - I see all of it and it makes me feel really loved and appreciated and all warm and fuzzy on the inside.  Thank you for being a part of my day. I will talk to you soon!
