Today I thought I would do something a little bit different and show you all that I had to eat today!  I enjoy reading/watching videos about what people eat and cook in their everyday lives because we are all massive stalkers and I thought I would give it a go.

For breakfast, I like to keep it simple with some peanut butter toast on whole grain bread.  Along with some sliced strawberries.  Literally so delicious and the peanut butter toast keeps me full until lunchtime.  I also normally only use creamy peanut butter but my dad accidentally bought the crunchy kind, but I think I have grown to love it (or not hate it as much haha!)

Lunch can be a bit more interesting.  I like to concoct, you see.  Basically whatever I have in the house is game.  Normally I try and make some sort of salad dish.  Today I made a romaine lettuce salad with fresh grown tomatoes(from my dad's garden), yellow pepper, carrots, peas, and to go along side with the salad, we made roast yukon gold potatoes (my fav!) seasoned with garlic salt and topped with BBQ sauce (I like BBQ with potatoes ok).  Bit random, but also very, very tasty.  I would definitely make this again!

I have actually been making this dish quite a lot recently, and it is freakin' delicious: simple, healthy fried rice.  I might do a blogpost soon on this recipe, because it it literally so easy and tasty, I think you would like it.  Basically just rice, peas, broccoli, red pepper, corn, onion, and soy sauce, and voila - fried rice.  I also through vegan "chicken" on top of the fried rice to make it look extra fancy #MasterChef.

So that is what I ate today.  A combination of simple, easy, healthy recipes, because I honestly do try to keep all of those things in mind when I think about what I'm going to eat.

Yesterday, my mom, dad, and I packed up the car for a day trip to Duluth to visit my sister at college.  I even drove the whole way!!!!  If you watched my video about why I hate driving, you will know how great of a feat this is to me.  I actually drove on the freeway...with construction!!  Woah I am just so excited.

We started off by going to lunch at the Tavern on the Hill, which is just like a fancier version of Applebee's.  It was good!  I got a sandwich and some fries, as per usual.

Then we went to the Animal Allies pet shelter, which was probably a bad idea because I now want all the cats.  ALL. OF. THEM.

Then we headed to the mall because Bath and Body Works had their wallflower scents for $2.95 each.  So I may have bought a few.  Only a few...haha ha ha h.

And on to Cub for some groceries where we found this creepy angry baby mask.  Why

Autumn.  That bit of time between the scorching, muggy summers and the bitter, cold winters.  Autumn is pretty much my favorite time of year for many reasons, one being the crisp mornings and breezy nights accompanied by rain.  Some people hate rain, but I absolutely love it.

Here are some reasons why rainy days are the best. ever.

  • It gives me a reason to stay in bed longer.  It's so nice to relax and lounge all day.  Literally my perfect day.
  • Getting to wear comfy clothes all day.  Seriously I could live in a baggy sweatshirt and sweatpants every single day.
  • It gives me an excuse to have some good old internet time.  Not that I don't normally, but I feel better about myself when it's bad weather outside.  Either checking emails, writing blogposts, surfing tumblr, pretty much anything really.
  • Having a movie marathon, complete with hot chocolate and freshly baked cookies.  Netflix + any comfort food = my ideal day.  It's simple math.
  • Listening to the rain hit the windows.  I love lying in bed listening to the pitter-patter of the rain; it's very poetic.  Oddly it makes me feel inspired as well - like I could write a powerful story.  Maybe one will come to me on a rainy day soon ;)

So to reiterate, rainy days are the best ever and that's all I have to say about that!

As I am writing to you today, it is a perfect Sunday evening, and I am cuddled in my blankets with the TV on, working on my laptop.  It reminded me how nice Sundays are, even though it means that it is the end of the weekend and a Monday follows it.
I thought I would go through and tell you what I love to do on Sundays because I think that Sundays are great and deserve to be appreciated as much as Saturdays.

So my perfect  Sunday begins with a nice lie in.  About 8:30/9am is the perfect time because I still get to sleep in a little without feeling like I "wasted" the whole day sleeping.  Next, I would either go out for brunch or make a nice selection of delicious breakfast foods.  But either way, BRUNCH.  My favorite breakfast foods are pancakes, belgian waffles, and hash browns.  Top that with homemade strawberry glaze and a latte, and I am a happy camper.  Once breakfast has been happily consumed, I like to read the Sunday paper, well not so much the paper but the Sunday comics and the ads for stores like Target, Best Buy, and Ulta (some of my favorite stores!)  Then I like to start thinking about getting ready for the rest of the day.  Minimal makeup and comfy clothes.  Since it is starting to feel like fall outside, I LOVE to go to the apple orchard on Sundays.  We pick up some apples (obviously), apple cinnamon donuts (YUM), and a half liter of freshly squeezed apple cider.  Good apple haul.

After we get home from the apple orchard, a football game is normally on TV, so we like to watch that.  I am a Minnesotan so of course I have to cheer for my Minnesota Vikings:  Skol Vikes! AT this point in time, I think about what to have for dinner, whilst consuming apple cinnamon donuts (as you do).  Especially on colder days, my go to Sunday meal is either soup or chili.  Warm, satisfying, and easy to make.  If not too late, I like to go by a walk by the lake; it's absolutely gorgeous especially in Autumn because of all the fall colors starting to appear on the trees.

Once it gets around 7pm, I like putting on a movie or something on Netflix.  My mom and I just finished watching all of the Lord of the Rings series (still one of my favorite movie series of all time!)  I'm pretty much for anythings: comedy, action, horror, cheesy flick, whatever!  I like to bring out my big, soft blankets to cuddle up in and my laptop to work or just catch up on tumblr, pinterest, twitter or whatever.

And so that leaves me where I started this blog post.  This is how I would spend my perfect Sunday.  Talk to you again soon!

I would say for the last couple of months, especially, I have been WAAAYY into skincare products and I would say that I have developed a good skincare routine that makes my skin happy.  Refreshed, moisturized, and happy.  In the past, I have had the worst skin problems; acne, acne scars, black heads, rosacea, you name it.  My skin used to make me feel so insecure, so I would cake on the foundation and concealer, which in turn, made my skin worse, which would cause me to cake on more; it's a catch 22.

So I would like to show you my current skincare routine.  Both morning and night.  Both super easy and quick.  As much as I love taking care of my skin, I literally can't even be bothered some mornings so I needed my skincare routine to be quick and easy AF.

So let's goooooo!


 Normally, I'm pretty lazy or running late in the morning so I like to keep it simple.
1. Simple Micellar Cleansing Water
I start off my morning skincare with a micellar water.  This is the first time I have ever tried a micellar water, and I really enjoy using it!  Just put some of the product on a cotton round and smooth it all over your face.  This product gets rid of all the "crap" on your face that accumulates during the night.  This micellar water keeps my skin nice and clean and refreshed.
2. CeraVe Hydrating Cleanser
Ok.  Ok.  Just a head's up that I am going to be talking about this product A. LOT.  This is literally my favorite cleanser ever ever ever.  It is a nice creamy consistency that leaves my skin feeling clean and hydrated without feeling tight and leaving a filmy layer on your skin.  I don't know if this step is really that necessary, but I generally like to include it anyways because I just love this cleanser so much and I feel like it has made such a huge difference in the appearance of my skin.
3. Aveeno Ultra-Calming with SPF 35 Moisturizer
I really like this moisturizer not only because it feels good on the skin, but because it has a SPF factor included in the formula.  This makes it great to use, especially on little/no makeup days and I feel confident that my skin is protected from the sun.


This might look a little more intimidating compared to the morning routine, but I promise, it is painless!
1. Clinique Take the Day Off Cleansing Milk
This is a really great makeup remover and I usually use it as a first cleanser to get rid of most of my makeup.  The milky consistency makes it really easy to apply and once washed off, leaves my skin feeling refreshed.
2. CeraVe Hydrating Cleanser
So I told you.  I bloody love it.  I use this as a second cleanser to get rid of any extra obvious makeup that the first cleanser didn't get, and leaves my skin feeling amazingly soft.
3. Simple Micellar Cleansing Water
I use this micellar again at night as a sort of toner (tbh I don't even know what a toner does, I am just trying to sound like I know what I'm talking about!)  and to prep the skin for the last couple of skincare products.  Not much else I can say about it other than I really like this micellar water.  And it's inexpensive as well!
4. The Body Shop Drops of Youth Concentrate
This is the most expensive out of all the products that I have but to be fair, a little goes a long way, and I don't go through it very quickly.  It is a dropper system and I use it as a serum before moisturizing.  It gives my skin a nice dose of moisture, while supposedly making your skin "younger".  I think it has done amazingly to keep my skin smooth looking.  Although I don't know if I can give all credit to this product, and not to the entire skincare routine.  But either way, I think this is well worth it, and I love it.
5. CeraVe Skin Renewing Night Cream
And last, but definitely not least, is moisturizer!  Now I've already written an entire blogpost raving about how much I love this moisturizer(you can read it here), so I don't want to go into too much detail, other than this moisturizer is truly a god-send and I love it.  Definitely repurchasing!

So that's it: my current skincare routine!  See - not too bad.  Simple, quick, and easy.  Basically my life motto.

Today I am going to give you what you are looking for: the ULTIMATE list of job hunting tips and websites to check out if you are in the process of job hunting, or just browsing around.  I am here to make this process as painless as possible for you, because I know how intimidating it can be, but with the right resources, you will be kicking it off in no time!

As I said in my video, the three tips I highly recommend:

  • Have a rock solid resume. (So important!)
  • Have someone(s) look at your resume/cover letter/any other things you submit.
  • Network. Network, Network.

Also, some jobs require cover letters and I really recommend that you have at least a template made so you can craft a couple when needed:

Once your resume is looking spiffing and appropriately highlights all of your amazing qualifications.  Now on to the job search.  Especially in the digital age, it is very easy and convenient to do all of your job hunting online.  Here are some great resources to look for jobs online:

  • LinkedIn
  • Indeed
  • Monster
  • Career Builder
  • Also, connecting with the career services department at your school, as they may have some resources or contacts for you.
  • Connect with alumni
  • Go to job fairs
All of this also connect a lot with networking.  I think that finding a job ultimately comes down to who you know, unfortunately.  You could have the best resume in the stack, but if you don't have some sort of face-to-face contact with someone making the decisions, it is just a piece of paper.  So networking.  Do it.

My friend Emily and I decided to take a very spontaneous roadtrip to Green Bay recently to visit our other friend Jaqueline, who was home from PA school.  So we left early on Sunday morning to take on the 4 and a half hour drive...oi it was going to be a long drive.  But that's okay because I was looking forward to having both my bestest friends with me since we graduated from college.
Packing up to go!  At the last minute...I think I started packing like 20 minutes before I was getting picked up haha

Had to make a quick stop at the gas station to fill up the tank and get some roadtrip snacks.

Still driving in the middle of Wisconsin.  Farms and more farms galore!

Emily's car started to overheat (yikes!!) so we mad a random pit stop in the middle of a dirt road for the car to cool down.

We finally made it!! The first stop was to the iconic Green Bay Packer's field.  I wanted to get a Packer's mug for my bad, so we literally had 15 minutes from when we got to Jaq's house until the Pro Shop closed for the weekend.

Inside our hotel.  We booked about an hour beforehand from  The hotel room we got (2 queen bed suite) was originally $249, but we got it for $89.  AMAZING!!

I got a sandwich and some fries yummy!!

We basically spent the rest of the night tucked into bed, watching Escaping Amish and going to bed by 10pm.  Crazy party animals I know.

The next morning we woke up bright and early (and by bright and early I mean like 9 am).  Jaq was going to take us to this local family-owned breakfast place called The Pancake Place which is famously known for having, you guessed it, amazing pancakes.  I was excited to see if it lived up to the hype!

They brought this out, called "the wheel of fun" jokes.  It was whipped butter, raspberry spread, and strawberry jam.

This was the food I ordered.  Holy crap.  The pancake was literally bigger than the size of my head.  I got one apple cinnamon pancake which came with toast, and stuffed hashbrowns which had a whole bunch of goodies in it.  Omg it was absolutely amazing!  But I was so stuffed, I didn't even finish half of it.  Good thing they had left-over containers.

From there, we headed home, sadly.  Another 5 hour drive ahead of us.

Green Bay was such a cool city.  I highly recommend taking a little trip there because there is so much to do.  I only wish we had more time there, but I guess that means that I have to go back again!

It's that time of year again...

A time of fun, food, and feet hurting, but mainly fun and food. I am still dreaming of all the food that I ate.  The Great Minnesota Get Together.  One of my most favorite moments of the summer, but also bittersweet because it generally signifies the end of summer. :(

It's beginning to look a lot like Christmas ;)

FOOD GLORIOUS FOOD.  This is one of the many MANY food stands at the fair.  My mouth is literally watering whilst writing this because I am thinking about all the food.

The sing a-long.  We sang Hello by Adele.  It was wonderful.

So that's pretty much what we did at the fair in pictures.

My mom and dad have three apple trees in their backyard, that have started producing an abundance of apples.  My dad asked me if I would like to do anything with the apples, as they are more "baking apples" than "eating apples".  I took the challenge to try and find a recipe for an apple cake because it is becoming Autumn and nothing screams "AUTUMN" like apples, and cinnamon, and cake.  I mean who could argue with that?!  I found this recipe on Pinch of Yum (linked, so you can check out their website if you would like!)

But for your convenience, I will also post the recipe here.
  • 1 1/2 cup brown sugar
  • 1/2 cup oil
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 1/2 cup flour
  • 1 1/2 cup chopped apples
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
NOTE: I used regular milk, as I did not have/want to use buttermilk, and I accidentally used 2 cups instead of 1 1/2 cups of apples.  Oops living life on the wild side.

  • Preheat oven to 325.
  • Mix ingredients in order, except for the last 3 ingredients.
  • Pour batter in a greased 9x13" pan.
  • Combine last 3 ingredients to make a topping and sprinkle it evenly over batter.
  • Bake for 45 minutes.
(pssssttt!  It's even more delicious served warm!)

Not the best picture, but a slice of the finished cake.  Delicious, and made the house smell of baked apples and cinnamon: the PERFECT autumn scent.

 And that's it!  So easy, and delicious.
